Day 21: 31 Days of Pinterest: Pink Lemonade Cake

Well... I always wonder what, if anything, I'll forget when I go on vacation.  This time it was the bundt pan I was needing to use for this Pinterest recipe.  So... I punted... and tweaked a bit... and it was still great, just not as picturesque. :)

Pink Lemonade Cake

Ingredients:
one lemon cake mix
one package lemon pudding mix
4 eggs
1/3 cup vegetable oil
1/2 cup milk
1/2 cup pink lemonade concentrate
pink or red food color (not sure how they got theirs so pink in their picture, the lemon pudding and cake are very yellow, so even when I added red color, it was very orangish)

Glaze:
1 cup pink lemonade concentrate
1/2 cup white sugar

Frosting (my add in)
1 container cool whip
3 Tbs pink lemonade concentrate


Preheat oven to 350 degrees. 
Since I didn't have a bundt pan, I instead made two square cakes.
Grease one bundt pan (or two squares!).

In large bowl, mix cake mix, pudding mix, eggs, oil, milk, 1/2 cup lemonade concentrate until smooth and pour into pan/s.  Bake for 50 minutes- 1 hour for bundt pan or 40-50 minutes for squares.


Remove from oven and make holes all over with a fork.  Pour glaze on top.  Take out when almost cool.

While waiting, mix one container cool whip with 3 Tbs pink lemonade concentrate with a whisk.

Place cake/s on serving plate and allow to cool.  Frost with frosting.  (Next time I think I would put frosting in between cakes also.)


Serve and enjoy!  A great summer cake!  Very rich so be sure to cut small pieces! :)

What you should know about HIV

-HIV can NOT be spread through casual/household contact. HIV is not spread through hugging, kissing, shaking hands, sharing toys, sneezing, coughing, sharing food, sharing drinks, bathing, swimming or any other casual way.
