Saturday Favorites

Two more GREAT and EASY recipes!!!

The first... our new FAVORITE way to cook potatoes!  So easy and SO TASTY... we all give them the stamp of approval!

Take some regular old potatoes... we got a bag for 78 cents!  Clean them and then you will slice them thinly ALMOST all the way through but not quite.  Sprinkle with olive oil and salt and bake at 425 degrees for 40-45 minutes.


That's it.  They don't need anything else on them and are SO good!


Next is a delicious pasta!  Just over a box of penne, cooked al dente.  Then toss in 1/4 cup of olive oil, a bunch of asparagus, cut into 1-2 in pieces and steamed and cubed chicken.  Sprinkle with shredded cheese (I used a mix of Parmesan, Romano, and Asiago) and broil for 5 minutes.  Talk about GREAT!

Saturday Favorites

Today we spent the day in downtown Chicago for the lighting of the Magnificent Mile.  Radio Disney was the main sponsor and had a stage with performers...


such as Olivia Holt (from Kickin' It)...



and Shane Harper (from Good Luck Charlie)...


Snacked on some FREE Eli's Cheesecake...




And staked an early spot for the parade...


Finally it was time!  You can see past the trucks how some trees were starting to be lit along the sides and some weren't yet, until the trucks passed.

We took the train which was great and made for a very cheap day... weekend passes for me are $7 round trip (all weekend actually I could come and go if I wanted) and kids are free!  Getting home was literally standing room only on the train but we got on as some of the first and had seats!  It was a long but very fun day!  Braeden opted to stay home with a sitter and did fantastic!

Saturday Favorites

We made a couple of amazing Pinterest recipes this week I'd like to share with you!  

The first was crock pot ham... so easy and tasty!  I like to shop Al*di's whenever I can as I just can get SO much more for my money.  I was pleasantly surprised to find this large spiral cut ham for a very reasonable price!

I did have to cut off a bit to fit it but that we just kept for sandwiches. :)

Layer the bottom of your crock pot with brown sugar.
Place the spiral cut ham on top, cutting off excess if needed.
Pour one can of either pineapple chunks or tidbits with the juice, over the top.
Add more brown sugar on top.
Cook on low 6-7 hours, but be sure to watch so the ham doesn't dry out, especially as crock pot cooking times vary.







Next we made what was/is touted as the best sheet cake ever.
Have to say it was VERY good!!!!!!

Saturday Favorites

Tried a couple of things from Pinterest this week again finally! 

First up, Pumpkin Seeds!  I know, it's a bit late to talk about Pumpkin seeds!  BUT, maybe you're like me and you STILL have one or two pumpkins that were never carved just leering at you to carve them?!  

These were very easy!  Scoop out all the gunk.  Wash and separate in cold water.  The "gunk" and the seeds tend to separate easily with the seeds floating to the top ready to be scooped out by hand.  Lay them to dry on a baking sheet with paper towels or towels underneath.  Once dry you're ready to begin.


We made two different batches, one with cinnamon sugar and one with sea salt.

For the cinnamon sugar I mixed the seeds in a bowl with a Tbs of olive oil.  They were then laid out on a clean baking sheet.  I sprinkled with cinnamon and then for an even more festive touch I sprinkled with not just regular sugar, but large orange sugar granules.  Bake at 400 degrees for about 15-18 minutes and they're good to go!


For the sea salt the method is the same, but instead of cinnamon and sugar they were sprinkled with sea salt.  I actually under salted this year and should have added more!


And finally we made Pepperoni Rolls, a recipe I've been dying to try!  They were very very easy and all four of us LOVED them!

You will need:
frozen white bread dough (I found and used Rhodes brand) - 1 1/2 loaves fed us FULL
oil
butter
shredded mozzarella
shredded parmesan
pepperoni (can use regular pepperoni as I did or sandwich size from the deli)
garlic powder 
Italian seasoning
(Optional: pizza sauce to dip)


I made three loaves and have two left over but as I said above we only made it through about 1 1/2 loaves.  I'm anxious to see how these fare as cold sandwiches or reheated!

Start by laying out the loaves you'll be using on a baking sheet, brushing some oil on top, and covering with plastic wrap.  The oil will allow the bread to rise without sticking.  Leave it alone for a few hours. (I left them for 3)


After the time the dough will have risen slightly.  Take out one at a time and roll it to about an 11 in by 11 in square.


Brush on oil then layer on the pepperoni and shredded cheeses.


Sprinkle with Italian seasoning and garlic powder.


Roll up the dough to form the pepperoni roll.  Place on a slightly greased baking sheet and brush melted butter on top.


Bake at 375 degree for 15-25 minutes.  Oven times for this vary heavily so be sure to check after the 15 min mark.  You will want a golden brown crust that makes a sound when tapped by a knife or your fingernail.


Allow to cool for 8-10 minutes before slicing.  Add pizza sauce on the side for dipping if you'd like and ENJOY!
